- Keep all the veggies ready.
- In a big bowl mix besan, all chopped veggies, 1/4 cup water and mix well remove all lumps.
- Add salt and sugar, chilli powder, watermelon seeds mix again. add paneer cubes then add oil mix gently.
- Add eno / fruit salt and sprinkle some water when bubbles form mix gently. dont over mix here.
- Pour this batter in a greased baking tin and bake in a preheated oven at 180 degrees for 20-25 min. Top layer gets browning.
- To make tempering.. Heat oil in a pan add rai, till and hing let it splutter. Add 2 tbsp of water n switch off heat.
- Pour this tempering over our baked veggie delight. Cool and cut into pieces and serve with mint chutney or ketchup.
