- You need 1 large parsnip
- Take 1 sweet potato
- Provide 3 carrots
- You need 1 onion
- Prepare 1/2 celeriac
- Take 2 cloves garlic (minced)

- Get 1 tin chopped tomatoes
- Use 3 pints good chicken stock
- Get 3 chicken thighs (on the bone)

- Season chicken thighs and roast at 190 until cooked. Meanwhile peel and dice all veg.

- To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
