- Prepare 3 tbsp Carrots (grated)
- Take 2 tbsp Button mushrooms (finely chopped)

Instructions to make Hot and Sour Soup:
- Heat the butter in a deep non stick pan. Add onion, French beans, carrot, mushrooms, cabbage, ginger, green capsicum and water and cook.
- Add salt, dark soy sauce, green chilli sauce and mix. Add crushed peppercorns, and water. and mix. let the mixture come to a boil.
- Mix corn flour in ½ cup water till smooth and add to the soup. Add white vinegar and mix. Add garlic, sugar and mix well.
- Add spring onion greens and mix. Serve hot.
