The ingredients needed to prepare Lauki / Doodhi Muthiya:
  1. Provide 1 Cup Whole Wheat flour
  2. Use 1 cup Gram Flour (Besan)
  3. Take 3 tsp Semolina (Sooji)
  4. You need 2 cup grated Bottle Gourd/Lauki
  5. Get 1 tsp Ginger paste
  6. You need 1 tsp Kasuri Methi
  7. Use 2 tsp Yogurt/Curd
  8. You need 1/2 tsp Turmeric powder
  9. Prepare 1/2 tsp Sugar
  10. Provide 1 chopped Chilli
  11. Get 1/4 tsp Cumin Seeds
  12. Take 1/4 tsp Fennal Seeds
  13. Provide 1/4 tsp Ajwain
  14. Prepare to taste Salt
  15. Prepare 1 tsp Lemon Juice
  16. You need 2 tsp Chopped coriander
  17. Prepare Pinch Baking Soda
  18. Prepare 1/4 tsp Asafetida (Hing)
  19. Get For Tempering:
  20. Use 3 tsp Oil
  21. You need 1/2 tsp Mustard seeds
  22. Use 1/2 tsp Sesame seeds
  23. Get 10-12 Curry Leaves
  24. You need 1 Chilli Sliced
Steps to make Lauki / Doodhi Muthiya:
  1. In a mixing bowl take Wheat flour, gram flour and Semolina
  2. To that add bottle guard, kasuri methi, chilli, sugar, cumin seeds, Ginger paste, salt, turmeric powder, curd, fennal seed, ajwain, lemon juice, Asafetida and baking soda.
  3. Mix everything and form a dough
  4. Grease hands with oil and form cylindrical logs from the dough and place in a greased plate.
  5. Heat the steamer and place the plate in steamer. Let it steam for 15-20 minutes.
  6. After 15 minutes check the logs through a toothpick or knife, if it comes out clean, muthiya are done otherwise cook them for another 5 minutes.
  7. Let them cool for 10 minutes. After that cut the logs of around 1/2 inch
  8. In another kadhai, heat oil and add mustard seeds, chilli, sesame seeds and curry leaves
  9. Add the steamed muthiya and cook for 2-3 minutes.
  10. Garnish with chopped coriander. Tasty and healthy Lauki Muthiya are ready to eat.. ENJOY!!!
