- Prepare 1 cup Grated Fresh Coconut
- Prepare 1/2 cup Green Garlic chopped
- Use 1-2 Green Chillies
- Provide 1 Small piece of Ginger
- Use 1/4 cup Green Coriander Leaves chopped
- You need 1-2 tsp Lemon Juice
- Get as required Water
- You need 1 cup Methi chopped
- Prepare 1/2 tsp Turmeric Powder

- Provide 100 gms Surti Papdi (Vaal)
- You need 4-5 Brinjals
- Provide 4-5 Baby Potatoes
- Prepare 1-2 Sweet Potatoes

- Prepare 2-3 Raw Bananas
- Provide 10-12 Ivy Gourd (Tindora)
- Use 2 tsp Oil
- Use 1 tbsp Ajwain/carom seeds

- Prepare 2 tsp Water

Steps to make Gujarati Undhiyo!:
- Muthiya - Mix all ingredients listed for muthiya in a mixing bowl except oil for frying. Gently make muthiya's and deep fry them and keep aside.
- Masala : - In a mixer grinder jar, take freshly grated coconut, green lasun, green chillies, a small piece of ginger, coriander, lemon juice. Make a paste adding little water if required. In a mixing bowl take finely chopped methi. Add this paste to it. Add haldi, red chilli powder, dhania jeera powder, garam masala, salt, sugar. Mix all well. Masala for undhiyo is ready.
- Cut and keep aside all the vegetables. Cut bananas in big pieces. Stuff brinjals and bananas with masala. Add all the vegetables except muthiyas to masala. Mix all well.
- In a big pressure cooker, heat oil. Add ajwain and pinch of hing. Saute for few seconds. Add vegetables mixed with masala. Mix well. Take very water. Add salt, sugar, haldi, red chilli powder, garam masala to water and mix well. Add this water to vegetables and give it a good mix. Pressure cook for 2 whistles.
- Then in a broad pan heat oil. Add ajwain and sesame seeds. Once it crackles, add cooked Undhiyo in pressure cooker and mix all well. Add prepared muthiyas and again mix well and cook for 1-2 minutes.
- Garnish with green garlic and serve hot with roti.
