- Cut up all vegetables and fish as specified above
- In a large stock pot, cook diced green pepper in olive oil over medium high heat for 6 minutes. Stir frequently
- Add parsley and green onions (and garlic if you are using garlic) and cook for 2 minutes
- Add tomato and tomato paste.
- Reduce heat to medium low
- Cook for 10 minutes, stirring occasionally
- Add fish, fish stock, wine, oregano, thyme, Asafetida ground (if using instead of garlic), and cayenne pepper
- Increase heat to medium high and cook for approx 10 min or until it goes to a boil
- Add salt and pepper to taste
