  2. Use yellow onion, chopped
  3. Prepare garlic, peeled and crushed
  4. Take large sweet potato, chopped into chunks - don’t need to peel it

  6. Prepare baby spinach
  7. Use Handful- 50g or so - fresh coriander

  1. Heat the oil in a pan. Add the onion and sauté on a medium heat for about 10min til the onion is soft and translucent.
  2. Add the garlic and sauté for a minute or two.
  3. Add the sweet potato and stock. Bring to a boil. Simmer for 10 mins or so.
  4. Put the sweet potato mix in a blender. Add the spinach, coriander, lemon juice and cayenne. Blitz until smooth. If using a hand blender, take the pan off the heat, add everything and then blend.
