The ingredients needed to make Kare-Kare:
  1. Provide 3 lbs oxtail (cut in 2 inch slices) you can also use tripe or beef slices
  2. Prepare 1 bundle sitaw or long beans
  3. Take 2 bundles bok choi / pechay
  4. Use 1 medium eggplant cut into 6 pieces
  5. Use 6 cloves garlic minced
  6. Prepare 1 medium onion, sliced
  7. Take 1 cup ground peanuts
  8. Prepare 1 cup peanut butter
  9. You need 1/2 cup shrimp paste
  10. Use 3 cups pork/beef broth
  11. Use 1/2 cup toasted ground rice
  12. Take 1 tsp achuete powder
  13. Use 1 tbsp fish sauce
  14. You need salt & pepper for taste
Steps to make Kare-Kare:
  1. In a large pot boil ox tail until soft then set aside. Usually takes 2 hours. For faster result put in oven and bake for 10 minutes each side at 400 degrees before boiling
  2. In a wok, sauté garlic and onion
  3. Add pork & fish sauce and cook for a 5 minutes
  4. Add 2 1/2 cups of pork/beef broth, salt, achuete, ground peanuts and peanut butter and simmer for 5 minutes
  5. Add toasted ground rice and simmer for 5 minutes
  6. Add vegetables and cook until vegetables are tender. Stir occasionally.
  7. Season with salt and pepper to taste
  8. Serve with white steamed rice and bagoong (shrimp paste)
