The ingredients needed to make Pumpkin soup 🤤:
- You need 1 bowl pumpkin, diced
- Take 1 large irish potato
- Get 1 medium size carrot
- Provide 1 large onion, diced
- Get 4 tbsp extra virgin olive oil or vegetable oil

- You need 3 cups pf water (divide equally into 2)
- Prepare 1/2 cup milk

- Gather all your ingredients
- In a heated cooking pot, add the olive oil. Once hot add the onion and carrot. Mix and saute for 2 minutes.
- Add the pumpkin,potato, black pepper, salt, mix and cook for 2 minutes. For my case the pumpkin was pre-cooked so i added it later.
- Add 1 1/2 cup of water. Cook till the vegetables are tender enough.
- At this point i added my pre-cooked pumpkin and thyme. Mix and cook for 1 minute. Transfer the content to your blender. Add the remaining water and blend till smooth.
- Transfer the soup back to your pot. Season with salt and pepper to your taste. Add the milk, mix and bring to boil. Let it simmer for 3-5 minutes then turn off your source of heat.
