- Provide 3 Eggplant
- You need 100 ml ※ Japanese soup stock
- Provide 4 to 5 tablespoons ※ Soy sauce
- You need 3 to 4 tablespoons ※ Mirin
- Get 1 tsp ※ Chopped red chili pepper
- You need 2 to 3 tablespoons Vegetable oil
- Use 1 dash Finely sliced green onion
Instructions to make Spicy Stir-Fried Eggplant:
- Cut the eggplant lengthwise, make a diagonal cut in each skin, and do the same from opposite side. Then, cut them about 5 cm thick.
- Soak the eggplants from Step 1 in water for about 5 minutes to remove harshness. The eggplants tend to float, so put a plate on the top to fully soak the eggplant.
- Mix the ※ ingredients well. Drain the eggplants from Step 2 thoroughly.
- Heat a frying pan with oil, first cook the skin side of eggplants from Step 2 for about 3 minutes.
