Before you jump to Broccoli Cheddar Soup recipe, you may want to read this short interesting healthy tips about Finding Healthful Fast Food.

Almost each and every “get healthy” and “weight loss” posting you go through will tell you to skip the drive through and make all of your meals yourself. There’s some worth to this. Now and then, though, you totally do not want to make an entire meal for your family or even just for yourself. Once in a while you only want to visit the drive through when you are on your way home and finish the day. Why shouldn’t you be able to do this every so often and not have a bunch of guilt about slipping up on your diet? This may be possible because an abundance of the popular fast food destinations are trying to make their menus healthier now. Here is how you can find healthy food at the drive through.

Milk, juice as well as water will be the best options for beverages. Choosing a huge soda as your beverage adds hundreds of poor calories to your meal. A solitary portion of soda is normally thought to be eight ounces. That serving can contain many spoonfuls of sugar along with at least a hundred calories. Most fast food soft drinks are a minimum of twenty ounces big. Thirty ounces, however, is much more common. Choosing a soda pop as your beverage boosts your calorie absorption by thousands and adds way too much sugar to your diet. It is much healthier to choose milk, juice or perhaps normal water.

Logic states that that one the easiest way to stay balanced is to bypass the drive through and never eat fast food. While this is usually recommended all you need to do is make a number of good decisions and going to the drive through isn’t anything to worry about–when you do it in moderation. Sometimes the thing you need is to let another person create your dinner. If you ultimately choose healthy items, the guilt usually associated with hitting the drive through shouldn’t be so bad.

Instructions to make Broccoli Cheddar Soup:
  1. Melt butter in a large, heavy duty saucepan.
  2. Sauté onion and carrot on medium heat for 5-8 minutes. Sweating them down. Add minced garlic.
  3. Add flour. Stir flour into veggies. Turn heat down if browning too fast. You want to be able to cook the flour for about 5minutes.
  4. Add half and half.
  5. Add chicken stock. *If you like your soup thin, add all 4 cups. If you like a thicker soup, just add 3 cups.
  6. Add bay leaf.
  7. This is where I add my salt and pepper. I start out with 1tsp salt and 1/2 tsp pepper. You can adjust to your preference.
  8. Bring soup up to a gentle boil, medium-high heat..let simmer for 10 minutes.
  9. At this point, I use my immersion blender. I've got kids that would die if they knew onions were in this. This way, you dont sacrifice flavor over the tastes of picky eaters.
  10. I threw about 1/2 tsp salt in and dumped my broccoli in. My broccoli was mostly florets, but I also left a head, with more stalks…for texture. Completely up to you..
  11. I lightly simmered, for 20 minutes. Or until your broccoli is tender.
  12. Remove bay leaf.
  13. Once you have tender broccoli, remove a couple cups of broccoli to a bowl. I used the immersion blender again, in the soup.
  14. Return the chunks of broccoli to the soup.
  15. Add cream cheese and cheddar cheese.
  16. Stir all that yummy cheese until it melts into the soup. 😆
  17. Ladle up and enjoy!! - I served this in bread bowls. Delicious!
